500g/1lbs French beans (Haricots Vert)
40 g/ 2 Tbs unsalted butter
100 g yellow onion finely sliced (or one small onion)
3 fresh ripe tomatoes/1 cup medium diced
2 garlic cloves minced
200 ml/1 cup vegetables stock
1 Tbs “Cote d’Azur” blend
3 g/2 Tbs fresh chopped Italian parsley leaves
Clean the French beans and cut into two or three parts (3-5 cm).
Sauté finely sliced onion in butter until translucent (medium-high heat)
In the meantime put French beans into hot water and cook 5-8 minutes until ( Al dente), then remove from water and drain.
Add French beans into sautéed onion; add diced tomatoes, garlic and parsley. Season it with “Cote d’Azur blend” . Stir and add some vegetables stock to cover French beans.
Cook until French beans are tender about 10-12 minutes, serve warm.
